Toms Mojo Sour Chicken

1 pound(s) chicken breast, boneless, skinless

3 tablespoon(s) all-purpose flour

Salt and pepper

2 tablespoon(s) butter, unsalted

1/2 cup(s) orange juice

1/4 cup(s) rum

1 large egg

1/2 cup(s) water

1/2 cup(s) mandarin oranges, canned

1. Pound chicken breast until equal in size.

2. Beat egg and water together to make egg wash.

3. Add salt and pepper to flour and mix well.

4. Heat butter in sauté pan over medium-high heat.

5. Dredge the chicken in egg wash then flour.

6. Quickly sauté the chicken in sauté pan. Turning only once until both sides are lightly golden brown. About 5 to 6 minutes.

7. Add sour orange juice and reserved mandarin orange juice to sauté pan.

8. Shake pan to move liquid around. Let chicken continue to cook for 2 to 3 more minutes, until sauce starts to thicken.

9. Take pan off burner and add rum. Place back on burner to allow rum to heat then light with fire stick lighter to allow rum to burn off.

10. Serve garnished with mandarin orange slices.

Client Instructions:

Thaw in the refrigerator overnight. Heat in the microwave covered at 80% power. Heat for 2 minutes then check for heat. If not hot enough continue to cook at 1 minute intervals until thoroughly heated.
