Julie Manchester’s Artichoke Pizza

Pizza Dough

1 package or 2 ¼ teaspoons yeast

1 tablespoon honey

1 cup warm water

2 tablespoons olive oil, plus additional oil for bowl

1 teaspoon salt

3 cups, unbleached, all-purpose flour;

Dissolve yeast into warm water;

Slowly mix in the rest of the ingredients;

Let rise; punch down; knead dough; let rise again;

Spread on pizza pan or pizza stone.

Let dough rest.

Prepare Topping

Mix the following together:

1 can, drained artichoke hearts in water, chopped;

1 cup mushrooms, chopped

1/3 cup mayonnaise

1 tablespoon lemon zest, finely chopped;

1 garlic clove, pressed or finely chopped;

½ cup parmesan cheese;

1 tablespoon Italian seasoning (basil, oregano, & marjoram);

Spread onto pizza crust.

Place thinly sliced plum tomatoes on the crust;

Bake in pre-heated 425 degree oven for 25 minutes or until crust is crispy golden brown. (Show#113)
